Pearl Barley Risotto
- 1 large onion
- 3 garlic cloves
- 150g pearl barley
- 1 tsp thyme (mix 1)
- 1 bay leaf (mix 1)
- vegetable stock (enough to make 750ml)
- parmesan (or vegan option)
- 50g blue cheese (or vegan option)
- kale (handful)
Cupboard Items Required
- 50g butter (or vegan option)
- fresh sage leaves
- salt & pepper
Cooking time 40-50 minutes.
Root Vegetable Curry
- small onion
- 2 carrots
- 1 sweet potato
- broccoli florets
- 3 cloves of garlic
- 1 red chilli
- 1 piece of ginger
- tbsp cumin seeds (mix 1)
- tbsp coriander seeds (mix 1)
- tbsp ground coriander (mix 2)
- tbsp ground cumin (mix 2)
- can of butter beans
- can of coconut milk
- 2 tbsp peanut butter (or tahini)
- 1 lime
Cupboard Items Required
- salt & pepper
- fresh coriander & basil (optional)
- a good glug of soy sauce or tamari fish sauce (optional)
Cooking time 20-30 minutes.
