Edinburgh Fermentarium make healthy, artisan fermented food in Leith. Award-winning small, colourful collections that look and tastes fantastic. Fermenting vegetables naturally in small batches and mixing traditional techniques with a modern twist to bring you delicious and healthy additions to your meals!

Crackin Kimchi: A combination of Napa cabbage, white cabbage, mooli, bell pepper, chilli and ginger with the added texture and sweetness of chopped and grated carrot to create what is by far our most loved product. It’s allium and fish sauce free, spicy, but not too hot and fragrant with the tangy spices of nigella, coriander and cumin.

Stoatin Sauerkraut: This sunny sauerkraut is made with fresh turmeric root and fennel seeds.

Braw Slaw: a magic blend of beetroot apple and cabbage which is sure to bring a fruity splash of colour to your dishes.

Ginger Kraut:  A simple cabbage recipe with ginger and cardamom pods, so delicious!

Tom Yum: A fragrant sauerkraut with lemongrass and lime leaves

ABOUT LACTO-FERMENTATION

Fermented foods are foods that have been through a process of lacto-fermentation in which natural bacteria feed on the sugar and starch in the food creating lactic acid. This process preserves the food and can create beneficial enzymes, b-vitamins, Omega-3 fatty acids, and various strains of probiotics. Some people liken this to a predigestion, which could make it easier for your body to absorb the nutrients.

Fermented foods are often rich in probiotic bacteria, so by consuming fermented foods you could add beneficial bacteria and enzymes to your overall intestinal flora, increasing the health of your gut microbiome and digestive system and enhancing the immune system.
